Messing around in the Historic Kitchen: Lessons Learned from Musings’ Historic Cooking Column

In this presentation I will introduce the audience to a selection of experiences, conversations, and dilemmas of food historians. Using one of the blog posts in Historic Kitchen as a case study, I will introduce some of the difficulties of historic food research, as well as some of the exciting discoveries I have encountered. We will go through the step by step process of recreating and researching a historic recipe, from how I select my cookbooks and recipes, to how I justify any changes, and finally to what conclusions I can draw. Attendees will leave with a greater understanding of both the limitations of researching historic cuisines, as well as a greater appreciation for what we can learn from experimental research.
